LEMON AND BEER FIZZ

Homemade is always best, especially in this heat waves we have been facing recently here in South Africa.

First of you start by heating 1/2 cup(125ml) lemon juice.

2 lemon peels,

1/4 cup(60ml) castor sugar

3tbsp(45ml) water,

4 springs thyme and a pinch of salt together over a low heat until sugar has dissolved.

Increase heat and simmer for 15minutes. Strain and set aside to cool. Pour chilled syrup over ice. Top up with 4 bottles (340ml each) beer or ginger beer. Serve with lemon wedges and mint.
